Ancho Poblano Chile Pepper

"The Pepper Chile Ancho/Poblano, `Capsicum annuum,' is a mildly hot pepper that is commonly used for chilies rellenos and mole sauces. It is referred to as ""Pablano"" when fresh and ""Ancho"" when it is a dried pod. This is one of the most popular chilies in Mexico. It is most commonly used stuffed with cheese or meat to make chilies rellenos, and when dried to produce the traditional mole pablano sauce. The fruits should be harvested when they are a dark green color, three and a half inches long and two inches wide."
