Bitter Melon

Momordica charantia

"The Bitter Melon Short Fu Qwa, `Momordica charantia,' is a refreshing and cooling compliment to beef, poultry and seafood. It is widely used in the Orient for a variety of culinary dishes. Its bitter flavor is due to quinine, and the taste is quickly acquirable by adults and children alike. The seeds should be planted in the spring, about one to two weeks after the last average frost date. The soil should be kept moist but not soggy. The fruit may be harvested when they are no longer than six inches in length and are still a light green color."
