Brassica oleracea
"The Collards Georgia Southern, `Brassica oleracea,' is a non-heading member of the cabbage family. It is a heat and cold tolerant plant that produces huge, cabbage-like, blue-green, slightly ruffled juicy leaves. Collards are often under-used as gourmet greens. Chefs unfortunately more often use lettuce and cabbage, and the delicious leaves of collards go unused. Collards prefer rich, moist, well draining soils high in organic matter. For drier climates, the soil should be watered once a week. The leaves can be harvested as needed."
