"The Bok Choy White Stem, `Brassuca rapa (Chinensis Group),' is commonly used in stir-fries with beef, pork or seafood. Growing White Stem is like growing two different vegetables at once. It features tasty, spinach-like tender leaves and crunchy, sweet stems. The leaves are succulent, with a mild Swiss chard mustard flavor. The leaves work well in salads when they are young. This Bok Choy prefers rich, moist, well draining soil high in organic matter. The heads should be harvested after about eight weeks. This is about when the yellow flowers have emerged from the center."
